In just 10 minutes you can whip up a batch of delicious Buddha Crunch Granola. Not only is it high in fiber and flavor, there is the added benefit of satisfaction in knowing that by taking the time to create this cereal, you are doing something good for YOU.

  • 1 cup chopped walnuts, pecans or almonds
  • ¼ cup raw sunflower seeds
  • ½ cup golden raisins
  • 1 ½ cup rolled oats (not quick oats)
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup (not lite syrup)
  • 2 tablespoons vegetable oil
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon

Preheat the oven to 250 F. Mix the rolled oats, nuts, sunflower seeds and brown sugar in one bowl. In another bowl, mix the remaining ingredients, except for the raisins. Spread the mixture on to an ungreased cookie sheet and bake for approximately 30-40 minutes, stirring every 5-10minutes. When the oats are a nice golden brown, remove the tray from the oven. Pour the granola into a bowl, add the raisins, and mix.

Note: To reduce the sugar, use sugar free syrup and your favorite low-calorie sugar replacement, or eliminate the sugar and syrup all together.

I would substitute Raw Agave for all of the sugar, and fresh applesauce for the vegatable oil...

This doesn't make sense? which mixture is spread on the cookie sheet, stirring every 5 minutes? the first mixture with the nuts and oats or the second with the oil and syrup? or put it all together first????
