We live in a world of smog and pollution, and foods filled with goodness-knows-what! You need to stop, shut the world off, and nurture your body with something soothing and healing. This detoxifying soup contains natural healing properties and, of course, great flavors. Ginger and turmeric are great natural anti-inflammatories, too!
Ingredients:
3 cups water
½ cup carrot, shredded
¼ cup finely chopped celery (with greens)
½ cup chopped fresh spinach, kale, and/or other favorite dark green veggie leaves.
½ tsp black pepper
3 slices fresh ginger
¼ teaspoon turmeric
1 tsp cumin seeds
1 clove garlic
Tiny pinch of cayenne pepper
3 white or brown mushrooms, sliced.
Cooking:
Add all the ingredients in a pot and bring to a boil. Once it begins to boil, turn it down to a low simmer, with the lid on, for about 45 minutes. Pour the soup through a strainer so you have a nice clear broth.
You can add the greens back into the soup and enjoy them, or enjoy the soup clear and pure as it is.
